116 oz canchic peas
0.25cupoil, olive
2Tbsesame seeds
2Tblemon, juice of
2clovesgarlic, chopped

Lightly toast sesame seeds in a pan. Drain peas and place in a food processor along with all the ingredients. Process until smooth . If too thick add a little more oil or lemon juice.

Serve on toasted pita wedges.

Hot Vidalia Onion Dip

Heat oven to 375 degrees. Sauté three chopped Vidalia onions in butter. Add remaining ingredients, and bake in a small casserole dish for 25 minutes. Serve with tortilla chips or crackers.

Shred one medium carrot and mix with shredded cabbage and minced onion. In a separate bowl, combine sugar, salt, Nature's Seasonings, pepper, milk, buttermilk, vinegar, lemon juice, and mayonnaise and beat until smooth. Add cabbage mixture and mix well. Cover and refrigerate for at least 2 hours before serving.

Brown beef in olive oil, add onion, sauté for 5 minutes. Add garlic, ketchup, mustard, vinegar and consommé and simmer for 40 minutes.
Remove meat from pan, let cool, shred by hand.
Add flour to water and mix, add to pan to thicken gravy. Add shredded beef into gravy.

Serve on rolls.

Chocolate Truffle Cakes

Preheat oven to 375 degrees. Generously butter a standard 6-cup muffin tin. Dust with flour, tapping out excess and set aside. Put chocolate, butter, and 1 tablespoon sugar in a medium heatproof bowl set over a pan of simmering water; whisk occasionally until smooth. Remove from heat, and let stand until cool and thickened, 3 to 5 minutes. Process eggs and remaining tablespoon sugar in a food processor until pale and doubled in volume, about 2 minutes. Sift flour and salt into egg mixture. Pulse each addition until combined, about 10 times. (Batter will be thick). Spoon mixture into the prepared muffin tins, filling cups three-quarters full; swirl tops with back of spoon. Bake until tops are springy to the touch, 18 to 20 minutes. Immediately turn our onto wire racks; reinvert, and let cool.

Hint: Bake while lunching, then serve warm with vanilla ice cream and berries. Shown here with strawberry sorbet
