Walter Raymond's Sweet and Sour Cucumbers

Cut cucumbers into thin slices. Dissolve sugar in vinegar on low heat. Thinly slice red onion. Add cucumbers, onions and liquid in a bowl and let marinate for 1 hour. Salt and Pepper to taste.
Chicken with Lemons

| 4 | Tb | rice flour |
| 1 | pinch | salt, kosher |
| 2 | Tb | oil, olive |
| 1 | Tb | lemon zest, finely chopped |
| 2 | oz | mushrooms, sliced |
| 1 | medium | lemon, juice of |
| 1 | 15 oz can | chicken broth |
| 1 | Tb | cornstarch |
| 1 | pinch | salt and pepper to taste |

Pound chicken breasts in zip-lock baggie to 1/2” thickness, add flourand salt, shake to coat. Heat oil in pan, brown chicken, add zest, mushrooms, and lemon juice. Cook for 3 minutes, add chicken broth, reserving 2 oz. Cook for about 7 minutes, until chicken is done. Add remaining chicken stock to corn starch, add to pan, stir. Salt and pepper to taste.

Place all ingredients in a microwavable bowl. Mix and cook, covered on high for 15 minutes.
Pinwheel Tart

| 1 | lb | peaches, sliced |
| 0.5 | pt | strawberries, whole |
| 0.33 | cup | blackberries, fresh |

Prepare tart shell according to recipe. Cool
Heat raspberry preserves in microwave for 1 minute until liquefied. Spread on tart shell bottom. Skin peaches, cut into 3/4 wedges, arrange along outside of tart shell in a full circle. Cut strawberries in half; arrange cut side down inside of the peaches. Finish center of tart with the blackberries.
Heat apricot preserves in microwave for 1 minute, until liquefied. Brush gently on top of fruit.
Serve with powered sugar; whip cream or vanilla ice cream.
Note: You may use frozen fruit, thawed.
